  1. Turn on your machine and select “CUSTOMIZE”.
  2. Raise the “Dry Temp” to 135°F. You should see “Candy/High Temperature Mode” shown on the screen. For the starburst, others go up to 140°F.
  3. Press “SAVE > START”.

Now that you know how to set your freeze-dryer to Candy Mode, let’s start freeze-drying.

  1. Put the freeze dryer on Candy Mode.
  2. Let the chamber pre-cool for 15 minutes before loading the trays.
  3. When the unit is ready, you’ll see “High Temperature Mode Candy Process” on the screen. Slide the button to the left until it shows “ON” and turns green.
  4. Close the drain valve and load the trays.
  5. Press “CONTINUE”
  6. On the next screen, you’ll see “WARM TRAYS” on display. Select “START” to begin the cycle.

  • How much candy you’re freeze-drying.
  • The structure of the candy.

A properly freeze-dried starburst should have a light, airy, crunchy texture. Test random pieces to see if it’s dry right down the middle. If you get some that are still gooey, chewy, and cold, put the trays back for 2-3 hours of extra dry time.
