Why do people love candy Corn? Without a doubt, it’s one of America’s most popular candies, and we’re not making that up. In 2019, it was estimated that 95% of holiday shoppers stocked up on this tasty treat. The problem is the candies stick together when stored for too long. Here’s how to freeze dry candy corn and have an unforgettable treat that excites your family. Even when it’s not Halloween yet.

How Is Candy Corn Made?

To successfully freeze dry candy corn, you have to understand what it’s made of. According to Brach’s, the largest manufacturer of the candy, it’s made up of:

  • Sugar
  • Corn syrup
  • Confectioner’s glaze (shellac)
  • Salt
  • Dextrose
  • Gelatin
  • Sesame oil
  • Artificial flavor
  • Honey
  • Yellow 6
  • Yellow 5
  • Red 3

All these ingredients (along with trade secret ones, of course) are melted in a candy slurry. Once they incorporate and color the recipe, they run the mix in a molding process. The end is a row of trays of the iconic pyramid kernels left to cool and set.

How Do I Prepare Candy Corn For Freeze Drying?

Candy corn is one of the straightforward candies to freeze dry. You don’t have to prepare a lot or need special equipment. You just need your freeze-dryer tray(s) to get started.

Yes, no need for parchment paper because the candies won’t stick to the tray. They won’t expand either, as gummy worms and sour skittles do. Just dump the candies on the tray, and put them in your freeze dryer.

Is Pre-Freezing Necessary?

It’s not required, but it can help with the process. Candy doesn’t have as much water as grapes and tomatoes do. However, pre-freezing reduces the time of your freeze-drying process to a few hours. This can be helpful when there’s a lot of food lined up for freeze-drying.

If you want to pre-freeze your candy, use the same trays you’ll freeze drying it in.

  3. If you have pre-frozen candy, select “FROZEN”. Then, let the unit pre-cool to -8°F (-22 °C) or to a temperature lower than your candy.
  4. Close the drain valve when your freeze dryer tells you to, then press “CONTINUE”

How Long Does Freeze Drying Candy Corn Take?

Freeze-drying candy corn takes at least 16-24 hours to freeze dry. What affects the freeze drying time can be several factors like:

  • How much material you’re freeze drying
  • The structure of the food you’re freeze drying
  • Temperature and humidity where you’re freeze dryer’s installed
  • Performance of your vacuum pump

How Do I Store The Candies?

Before you store the candies, make sure they’re all freeze-dried. Test random pieces while the trays are still warm. If any candies feel soft, gummy, or cool to the touch, put the trays back for 2-3 hours of extra dry time.

To store your freeze-dried candy corns, put them in either Mason jars or Mylar bags. The jars are good if you got kids that can’t keep their hands off the candies. The Mylar bags are great for long-term storage (we’re talking years here). They’re also ideal for bringing the sweets for camping or any outdoor trips.

Before you seal your containers, place 1-2 of 300cc oxygen absorbers for every gallon size of your container. This will take out any residual oxygen that can ruin your freeze-dried candy while in storage.
