How To Freeze Dry Mini Marshmallows

If you’re one of the lucky ones to have a freeze dryer, then it’s worth the try to make them! Especially now that Harvest Right has Candy Mode. It makes the freeze drying faster compared to your standard method.

Just a few notes on the Candy Mode:

  • Candy Mode is available for freeze dryers with a v5.x.19 or higher software.
  • Your machine doesn’t freeze the food, so set your Initial Freeze and the Extra Freeze Time to 0 (zero).
  • There’s no need to freeze your mini marshmallows, either. We want our candies to be soft to help them release moisture.
  • The Extra Dry Time will be the only dry time your freeze dryer will be on. This means if you set it for 2 hours, that’s how fast your marshmallows will process.
  • Toggle the Candy Mode after the machine cools down. If you don’t toggle it, the machine will operate as normal.

Freeze Drying Using Candy Mode

It’s simple to turn on the candy mode with a few steps.

  1. Turn on your freeze dryer and select “CUSTOMIZE”
  2. Set the following on the next screen:
    1. Initial Freeze: 0
    2. Extra Freeze Time: 0:00
    3. Dry Temp: 145F (you should see Candy/High-Temperature Mode on display)
    4. Dry Mode: Normal
    5. Extra Dry Time: 2:30-3:00
  3. Press “SAVE > START”.
  4. Allow the unit to pre-cool for 15 minutes.
  5. On the next screen, toggle the “Candy Process” on.
  6. Close the drain valve and load the trays.
  7. Close the chamber door, ensuring a tight seal around the ring.
  8. Press “CONTINUE”.
  9. You’ll be asked to warm the trays to your drying temperature. Since we’re dealing with marshmallows, this is optional, so you can press “SKIP.”
  10. If you want to warm the trays, press “START” and set the “ADD TIME” to 3-4 minutes.
  11. Once the freeze dryer’s done, it will ask you once again to warm the trays.
  12. If you choose to warm the trays, open the drain valve after this, then take out the freeze-dried marshmallows.
